A warm, hearty breakfast bake packed with protein and delicious blueberries, perfect for meal prep and customization.

  • 1 cup cottage cheese (or almond/coconut yogurt for dairy-free)
  • 2 large eggs
  • ¼ cup milk (any type, including plant-based)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup rolled oats
  • ¾ teaspoon baking powder
  • 1 cup blueberries (fresh or frozen – do not thaw if frozen)
  • Dollop of Greek yogurt
  • Drizzle of honey or maple syrup
  • Chopped nuts (walnuts/almonds)
  • Extra fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Blend together the cottage cheese, eggs, milk, honey or maple syrup, vanilla extract, cinnamon, and salt until smooth.
  3. Stir in the rolled oats and baking powder until well combined.
  4. Fold in the blueberries, reserving some for the topping.
  5. Pour the mixture into the greased baking dish and spread it evenly. Sprinkle the reserved blueberries on top.
  6. Bake for 28-32 minutes, or until the edges are golden and the center is set.
  7. Let it cool for 5-10 minutes before slicing. Serve warm, topped with Greek yogurt, a drizzle of honey or maple syrup, and chopped nuts.

Notes

For an extra fluffy texture, ensure to blend the wet ingredients well. If using frozen blueberries, fold them straight into the batter.
