Crispy skin and juicy meat make these oven-baked bone-in chicken thighs a comforting and flavorful dish, perfect for busy weeknights or family gatherings.

Ingredients

Scale
  • 4 bone-in chicken thighs (skin-on)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 2 tbsp fresh herbs (rosemary or thyme), finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin. Generously season both sides with salt and pepper.
  3. In a mixing bowl, combine olive oil, garlic powder, smoked paprika, and finely chopped herbs.
  4. Rub the spice mixture evenly over each chicken thigh.
  5. Place the seasoned thighs in a baking dish, skin-side up, allowing space between each piece.
  6. Bake for 35-40 minutes or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.

Notes

Ensure to pat the chicken dry before seasoning for extra crispiness. Let the chicken rest for a few minutes after baking for maximum tenderness.
