Oven Baked Chicken Parmesan

A healthier take on the classic Chicken Parmesan, baked for crispy flavor without frying.

Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and brush it with olive oil.
  2. Cut the chicken breasts in half horizontally, placing them inside a zip-top bag to pound them to an even thickness.
  3. Pat the chicken dry and sprinkle kosher salt and black pepper on both sides.
  4. Combine panko breadcrumbs, parmesan cheese, garlic powder, oregano, salt, and pepper in a shallow dish. In another dish, whisk the egg until blended.
  5. Dip each piece of chicken into the egg, allowing excess to drip off, then coat evenly with the breadcrumb mixture. Place them on the prepared baking sheet.
  6. Bake in the oven for 15 minutes or until the chicken is cooked through.
  7. Carefully flip the chicken, spoon marinara sauce over each piece, and top with shredded mozzarella. Broil for 2-4 minutes until the cheese is melted and bubbly.

Notes

For variety, try adding fresh herbs or swapping cheeses. Store leftovers in an airtight container for up to 3-4 days.
