A healthier twist on the classic Italian-American chicken parmesan, oven-baked for a crispy finish and packed with flavor.

Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts (about 1 pound total)
  • 1 egg
  • 1 cup panko bread crumbs
  • 1/2 cup parmesan cheese (fresh grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella
  • 2 tablespoons minced parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil and brush it lightly with olive oil.
  2. Slice the chicken in half horizontally to create thinner pieces, then pound them to an even thickness. Pat them dry and season with salt and pepper.
  3. Combine the panko, parmesan, garlic powder, oregano, and black pepper in a shallow dish. In another bowl, beat the egg.
  4. Dip each piece of chicken into the egg, then dredge it in the breadcrumb mixture, pressing down to ensure it sticks.
  5. Place the coated chicken on the baking sheet and bake for 15 minutes, or until cooked through.
  6. Flip the chicken, drizzle marinara sauce over the top, and sprinkle with mozzarella.
  7. Broil for 2-4 minutes, or until the cheese is melted and bubbly.
  8. Serve over spaghetti or alongside a fresh salad, garnished with parsley if desired.

Notes

For a gluten-free version, substitute panko breadcrumbs with gluten-free breadcrumbs. Make sure to pound the chicken evenly for consistent cooking.
