A classic Italian dish featuring crispy baked chicken, marinara sauce, and melted cheese that’s perfect for any occasion.

  • 2 large chicken breasts, sliced horizontally into 4 pieces
  • 1 cup fine breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 tsp garlic powder
  • 1 large egg (beaten)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • Salt and black pepper to taste
  • Olive oil spray or 1 tbsp olive oil
  • Optional: dried oregano, basil, red pepper flakes, fresh basil or parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts horizontally into 4 thin pieces. Season them with salt and pepper.
  3. Beat the egg in one bowl until well-blended.
  4. Combine the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper to form the coating mixture in another bowl.
  5. Dip each piece of chicken into the beaten egg, ensuring a good coating, then dredge in the breadcrumb mixture.
  6. Arrange the breaded chicken on a greased baking sheet and lightly spray with olive oil.
  7. Bake for 20 minutes, flipping halfway through.
  8. Remove from the oven and top with marinara sauce, shredded mozzarella, and additional Parmesan cheese.
  9. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is bubbly and golden.

Notes

For extra crunch, consider using panko breadcrumbs. Serve immediately for best taste.
