Oven Baked Starbucks Egg Bites

Delightful blend of fluffy eggs, creamy cottage cheese, and savory bacon, perfect for breakfast, lunch, or dinner.

Ingredients

  • 9 large eggs
  • 1.5 cups cottage cheese
  • 1 tsp salt
  • 6 strips cooked bacon
  • 2/3 cup shredded gruyere cheese

Instructions

  1. Preheat your oven to 350°F and spray a 12-slot muffin tin with cooking spray.
  2. Mix the eggs, cottage cheese, and salt in a blender until smooth.
  3. Chop each strip of bacon into quarters and place half a strip in each muffin slot.
  4. Spoon the shredded gruyere cheese over the bacon in every slot.
  5. Carefully pour the egg and cottage cheese mixture into each muffin cup, filling them nearly to the top.
  6. Create a steam bath by placing a baking sheet on the bottom rack of the oven and boiling a pot of water, then pour the boiling water onto the baking sheet.
  7. Put the muffin tin on the middle rack of the oven, using oven mitts to protect your hands.
  8. Close the oven and bake for about 25 minutes.
  9. Once baked, use caution while removing the muffin tin, then turn off the oven and let the baking sheet cool before taking it out.
  10. Allow the egg bites to cool for a minute or two before gently removing them from the tin. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days. Reheat in the microwave or oven.
