Overnight Baked Banana French Toast Casserole

A delicious and easy casserole for breakfast that combines bread, bananas, and a creamy egg mixture, topped with a crunchy streusel.

Ingredients

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups (480ml) milk (whole or 2%)
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 cup (104g) sugar
  • 1/4 cup (36g) light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium-sized bananas, chopped
  • 3/4 cup (98g) all-purpose flour
  • 3/4 cup (169g) firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup (112g) salted butter, cut into pieces

Instructions

  1. Grease a 9×13 inch casserole dish.
  2. Place the bread chunks in a large bowl and set aside.
  3. In another large bowl, whisk together the eggs, milk, cream, sugars, vanilla extract, and cinnamon until well blended.
  4. Pour the egg mixture over the bread chunks. Add the chopped bananas and gently stir to combine.
  5. Transfer the mixture into the prepared casserole dish and spread it evenly. Cover with plastic wrap and store it in the fridge overnight.
  6. The next morning, preheat the oven to 350°F (176°C).
  7. Bake the casserole for about 35-40 minutes, until it reaches your desired level of doneness.
  8. While it bakes, combine the dry ingredients for the streusel, excluding the butter.
  9. Add the butter to the dry mixture and mash it until it resembles crumbs.
  10. When the casserole is almost done, remove it from the oven and crumble the streusel on top.
  11. Return it to the oven and continue baking for an additional 5 minutes, or until the streusel is melted and golden.
  12. Serve warm, drizzled with syrup.

Notes

Use slightly stale bread for better texture. Adding chocolate chips or different fruits can vary the recipe.
