A vibrant and hearty salad packed with protein, healthy fats, and fresh greens, perfect for dinner or brunch.

Ingredients

  • 2 grilled chicken breasts, sliced
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 avocado, diced
  • 2 hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup blue cheese, crumbled (optional)
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Grill the chicken breasts until fully cooked, then let them rest briefly before slicing.
  2. In a large bowl, combine the mixed greens, avocado, hard-boiled eggs, cherry tomatoes, and bacon.
  3. Top the salad with the sliced grilled chicken.
  4. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, and add salt and pepper to taste until well combined.
  5. Drizzle the honey Dijon dressing over the salad, toss gently, and serve immediately.

Notes

For a beautiful presentation, arrange the salad on a platter. Keep dressing separate if storing leftovers.
