Delightful bite-sized pancake treats that are fluffy and golden-brown, perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thoroughly grease a mini muffin pan to prevent sticking.
  3. In a medium bowl, combine the flour, sugar, baking powder, and salt. Stir well to mix.
  4. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  5. Gently pour the wet mixture into the dry ingredients. Stir until just combined; be careful not to overmix—the batter should remain light and fluffy.
  6. Scoop the batter into the greased mini muffin pan, filling each cavity about two-thirds full to allow space for rising.
  7. Bake in the oven for 10 to 12 minutes, or until the poppers are golden brown. A toothpick inserted should come out clean.
  8. Allow them to cool slightly before removing from the pan.
  9. Serve warm with syrup, butter, or your favorite toppings!

Notes

Try adding chocolate chips or blueberries for an extra surprise! Store leftovers in an airtight container for up to three days.
