Pancake Poppers are a delightful twist on classic pancakes, served in bite-sized form perfect for dipping in syrup or topping with fresh berries.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup or berries for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for about 12-15 minutes, or until golden brown and a toothpick comes out clean.
  7. Remove from the oven and let them cool slightly in the tin.
  8. Serve warm topped with maple syrup or fresh berries.

Notes

Use room temperature ingredients for better consistency. Consider adding vanilla extract or cinnamon for extra flavor.
