A delightful twist on traditional pancakes, these bite-sized poppers are fluffy and perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Optional toppings: maple syrup, berries, whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix the buttermilk, egg, and melted butter until thoroughly blended.
  4. Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix.
  5. Spoon the batter into each muffin cup, filling them about three-quarters full.
  6. Bake for 12 to 15 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  7. Allow the poppers to cool slightly before carefully removing them from the tin.
  8. Serve warm with your choice of toppings.

Notes

For fluffiest poppers, don’t overmix. You can substitute buttermilk with regular milk mixed with vinegar or lemon juice.
