A quick and budget-friendly Parmesan-Crusted Chicken recipe that’s crispy and full of flavor, perfect for weeknight dinners.

  • 4 chicken breasts (about 1 to 1.25 lb total; boneless, skinless)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 23 tablespoons olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a baking dish or line it with foil.
  2. Combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, and a pinch of salt and pepper in a medium bowl.
  3. Beat the eggs in another bowl until smooth.
  4. Pat the chicken breasts dry to ensure the coating sticks. Pound them for uniform thickness if needed.
  5. Dip each chicken breast into the beaten eggs, letting excess drip off. Press into the breadcrumb mixture, coating evenly, and repeat for all breasts.
  6. Heat the olive oil in a large skillet over medium heat and brown the coated chicken for about 3–4 minutes on each side until golden and crisp.
  7. Transfer the browned chicken to the prepared baking dish and bake in the oven for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  8. Allow the chicken to rest for 3–5 minutes before slicing and serving.

Notes

For variations, try using gluten-free breadcrumbs or adding Italian herbs to the breadcrumb mixture.
