A quick and delicious Parmesan crusted chicken recipe that is perfect for family dinners and meal prep.

  • 4 chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Beat the eggs in a shallow bowl and season with salt, pepper, garlic powder, and Italian seasoning.
  3. Mix together the Parmesan cheese and breadcrumbs in another bowl.
  4. Dip each chicken breast into the egg mixture, ensuring it’s well-coated.
  5. Roll each piece in the breadcrumb mixture until fully coated.
  6. Heat a drizzle of olive oil in a skillet over medium heat.
  7. Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  8. Transfer the seared chicken to a baking dish.
  9. Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat at 350°F (175°C) for about 15 minutes.
