A delightful dish of crispy, cheesy chicken that’s quick to prepare and immensely satisfying.

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Olive oil (for frying)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the grated Parmesan cheese, breadcrumbs, garlic powder, salt, black pepper, and Italian seasoning in a shallow bowl.
  3. Beat the eggs in another bowl until well combined.
  4. Dip each chicken breast into the beaten eggs, allowing any excess to drip off.
  5. Coat the chicken in the Parmesan breadcrumb mixture, ensuring it’s evenly covered on both sides.
  6. Heat a generous amount of olive oil in a skillet over medium heat.
  7. Cook the chicken breasts for about 3-4 minutes on each side until they are beautifully golden brown.
  8. Transfer the chicken into a baking dish and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through.

Notes

Serve with fresh arugula salad or roasted vegetables, and marinara sauce for dipping. Can be made lighter by skipping the frying step.
