A savory and crunchy chicken dish that pairs Parmesan cheese with breadcrumbs for a delightful weeknight meal.

  • 4 boneless, skinless chicken breasts (approx. 1 to 1.25 lb total)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Olive oil for frying (about 2–3 tablespoons)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly oil a baking dish or line it with foil for quick cleanup.
  2. Mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper in a medium bowl. Taste the mixture and adjust seasonings as desired.
  3. Beat the eggs in another bowl until smooth.
  4. Pat the chicken breasts dry with a paper towel. Dip each breast into the egg mixture, letting the excess drip off.
  5. Press each breast firmly into the breadcrumb mixture to ensure an even coating.
  6. Heat olive oil in a large skillet over medium heat until shimmering.
  7. Add the chicken to the skillet and brown for 3–4 minutes on each side until golden, careful not to overcrowd the pan.
  8. Transfer the browned chicken to the prepared baking dish and bake for 20–25 minutes, or until an instant-read thermometer reads 165°F (74°C).
  9. Allow the chicken to rest for 3–5 minutes before serving.

Notes

For a different crunch, substitute breadcrumbs with crushed cornflakes or use seasoned bread crumbs for added flavor.
