A flavorful and simple one-pan meal featuring crispy chicken, potatoes, and green beans, perfect for busy weeknights or family gatherings.

Ingredients

  • 1 1/2 lb chicken breast (about 34 pieces)
  • 2 T olive oil (for chicken)
  • 2 garlic cloves, minced (for chicken)
  • 1/3 c grated parmesan (for chicken)
  • 1/3 c breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced (for potatoes)
  • 2 T olive oil (for potatoes)
  • Salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil (for green beans)
  • 1 garlic clove, minced (for green beans)
  • 1 T parmesan (optional for green beans)

Instructions

  1. Preheat your oven to 425°F and line a sheet pan with parchment paper.
  2. Combine in a medium bowl the ingredients for the potatoes and toss until they are evenly coated. Spread the seasoned potatoes on one-third of the sheet pan and roast for about 10-15 minutes.
  3. Mix the chicken ingredients in another bowl until the chicken is thoroughly coated with the mixture.
  4. Add the chicken to the pan next to the potatoes and return it all to the oven.
  5. Combine the ingredients for green beans and add them to the pan.
  6. Bake everything for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  7. Switch to broil for 4-5 minutes towards the end of cooking for an extra crispy finish.
  8. Let it cool for a few minutes before serving.

Notes

For best results, marinate the chicken overnight for deeper flavors. Keep a close eye while broiling to avoid burning.
