A cozy and fulfilling baked oatmeal that combines peanut butter and banana for a delicious breakfast or snack.

Ingredients

  • 1 large spotty banana (mashed)
  • ½ cup creamy all-natural peanut butter
  • 3 tbsp real maple syrup (or honey)
  • 1 ¾ cups unsweetened almond milk or oat milk
  • 1 large egg (or 1 tbsp ground flaxseed with 3 tbsp of warm water for vegan option)
  • 2 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch square dish with cooking spray or avocado oil.
  2. Mash the banana thoroughly in a large bowl. Mix in the creamy peanut butter, maple syrup (or honey), almond milk (or oat milk), egg (or flaxseed mixture for vegan), and vanilla extract. Whisk until smooth and well combined.
  3. Stir in the old-fashioned rolled oats, ground cinnamon, baking powder, and salt. If the mixture appears too thick, add a splash more milk to reach your desired consistency.
  4. Transfer the mixture to the greased baking dish and spread it out evenly.
  5. Bake in the preheated oven for about 35 to 45 minutes, or until the top turns golden brown and the center is set.
  6. Allow it to cool for 5 minutes before slicing. For an extra treat, drizzle additional peanut butter on top and add banana slices. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for about 4 to 5 days. Reheat portions in the microwave or oven.
