  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and chopped
  • 2 tablespoons lime juice

Instructions

  1. In a mixing bowl, combine olive oil, minced garlic, cumin, paprika, salt, and pepper to create the marinade.
  2. Add the chicken breasts to the bowl, ensuring they’re fully coated, and marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and with grill marks.
  5. While the chicken grills, blend mayonnaise, chopped cilantro, jalapeño, and lime juice in a food processor until smooth.
  6. Remove the grilled chicken and serve it with a generous drizzle of the creamy green sauce.

Notes

For a lighter option, swap mayonnaise for Greek yogurt. Serve with rice, quinoa, or mixed salad for a complete meal.
