A delightful combination of creamy goat cheese and vibrant pesto with perfectly cooked eggs, served atop crunchy toasted bread.

Ingredients

  • 4 Eggs
  • 1/4 cup Pesto sauce
  • 2 oz Goat cheese
  • 2 slices Crusty bread
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat up a skillet over medium heat and pour in a splash of olive oil.
  2. Add the pesto sauce and warm for about one minute.
  3. Gently crack the eggs into the skillet, ensuring they sit atop the warm pesto.
  4. Cook until the whites are set (3-4 minutes) but keep the yolks runny.
  5. Toast the crusty bread to your desired level of crispiness.
  6. Spread a layer of goat cheese on the warm bread.
  7. Plate the pesto eggs on top and sprinkle with salt and pepper.

Notes

For extra flavor, garnish with fresh basil or balsamic reduction. Store leftovers in an airtight container for up to 2 days.
