Pesto Grilled Cheese

A gourmet twist on the classic grilled cheese sandwich, featuring melty mozzarella, vibrant tomatoes, and flavorful pesto, all layered between crispy sourdough bread.

Ingredients

  • 4 slices of sourdough bread
  • 4 tablespoons of pesto sauce
  • 4 slices of mozzarella cheese
  • 4 slices of tomato
  • 2 tablespoons of butter, softened
  • 1 tablespoon of olive oil

Instructions

  1. Spread 1 tablespoon of pesto sauce evenly on one side of each slice of sourdough bread.
  2. On the pesto-covered side of two slices, lay down one slice of mozzarella cheese.
  3. Stack two slices of tomato on top of the mozzarella cheese on each slice.
  4. Add another slice of mozzarella cheese on top of the tomatoes for a delicious layered effect.
  5. Complete the sandwiches by placing the remaining slices of sourdough on top, pesto side down.
  6. Spread 1 tablespoon of softened butter on the outside of each sandwich, covering both the top and bottom slices.
  7. Heat the olive oil in a skillet over medium heat.
  8. Carefully place the sandwiches in the skillet and cook for about 3–4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  9. Once cooked, remove the sandwiches from the skillet and let them cool for a minute or two.
  10. Cut the sandwiches diagonally for easy handling and serve warm.

Notes

For best results, use fresh, high-quality mozzarella and consider adding basil leaves for extra flavor. Pair with tomato soup or a green salad.
