This creamy and cheesy chicken and rice casserole is a comforting dish made with simple ingredients, perfect for weeknight dinners or family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cream of chicken soup
  • 1/2 cup onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until they are translucent and fragrant, about 3-4 minutes.
  3. In a large mixing bowl, combine the shredded chicken, uncooked rice, chicken broth, cream of chicken soup, garlic powder, salt, and pepper. Stir until everything is well mixed.
  4. Pour the mixture into a greased casserole dish, spreading it out evenly.
  5. Generously sprinkle the shredded cheese over the top.
  6. Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving. Enjoy!

Notes

For more flavor, you can add diced bell peppers or use butter instead of olive oil when sautéing the onions. Leftovers can be refrigerated for 3-4 days or frozen for 2-3 months.
