Delicious, protein-packed egg bites made with potatoes, cottage cheese, and chives, perfect for a quick breakfast or snack.

  • 2 medium potatoes, peeled and diced
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease a muffin tin with cooking spray or oil.
  2. Boil the diced potatoes in a pot until they’re soft. Drain and let them cool slightly.
  3. Whisk together the eggs, cottage cheese, salt, and pepper in a mixing bowl until fully combined.
  4. Fold in the cooled potatoes, shredded cheddar, and chopped chives until well mixed.
  5. Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until the bites are set and the tops are lightly golden.
  7. Cool for a few minutes before gently removing them from the tin. Enjoy warm or store in the fridge!

Notes

To keep them fresh, store leftovers in an airtight container in the refrigerator for up to 4 days. They freeze well too!
