Fluffy and nutritious protein waffles, perfect for breakfast or a snack.

Ingredients

  • 1 cup oat flour
  • 1 scoop protein powder (vanilla or unflavored)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk (or any plant-based milk)
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil (melted or for greasing the waffle iron)

Instructions

  1. In a large bowl, mix together the oat flour, protein powder, baking powder, and salt.
  2. In another bowl, whisk the almond milk, maple syrup (if using), vanilla extract, and melted coconut oil until combined.
  3. Pour the wet mixture into the dry ingredients, stirring until you have a smooth, lump-free batter.
  4. Preheat your waffle iron and grease it lightly if necessary.
  5. Pour the batter onto the preheated waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crispy.
  6. Serve them warm, topped with your favorite garnishes.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the toaster for crispiness.
