Ingredients

  • 2 pounds pork shoulder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro, chopped
  • Chopped onions for topping
  • Sliced radishes for serving
  • Lime wedges

Instructions

  1. In your slow cooker, combine 2 pounds of pork shoulder, 1 chopped onion, 4 minced garlic cloves, juice from 1 orange, juice from 1 lime, 1 tablespoon of chili powder, 1 teaspoon of cumin, and salt and pepper to taste.
  2. Cover and cook on low for 8 hours, or until the pork is tender and can be easily shredded.
  3. Once cooked, use two forks to shred the pork into bite-sized pieces.
  4. Serve the warm shredded pork on corn tortillas, topped with fresh cilantro, chopped onions, sliced radishes, and a squeeze of lime.

Notes

Feel free to swap out the pork shoulder for pork butt or adjust the seasonings based on your preferences. Consider serving with homemade guacamole, corn salad, or light Mexican beer.
