A delightful and easy-to-make blueberry French toast casserole, perfect for brunch or a cozy breakfast.

  • 1 loaf of bread (preferably brioche or challah)
  • 1 cup fresh blueberries (or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing the casserole dish)
  • Powdered sugar (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with butter.
  2. Cut the bread into cubes. Layer half of the bread cubes in the bottom of the prepared dish.
  3. Evenly sprinkle half of the blueberries over the bread layer.
  4. Add the remaining bread cubes on top of the blueberries.
  5. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, ground cinnamon, and salt until smooth. Pour this mixture evenly over the bread and blueberries.
  6. Gently press down the bread with a fork or spatula, ensuring it absorbs the custard fully.
  7. Let the casserole sit for about 15 minutes, or cover and refrigerate overnight for a more developed flavor.
  8. Bake for 30-35 minutes, or until the top is golden brown and the casserole is set in the middle.
  9. Allow it to cool slightly before serving. Dust with powdered sugar if desired and enjoy!

Notes

Use day-old bread for better absorption of the custard. Feel free to mix in some cream cheese for a rich variation. Don’t skip the resting period.
