A delightful casserole that combines the comforting flavors of French toast with fresh blueberries, perfect for breakfast or brunch.

  • 6 slices of bread, cubed
  • 2 cups of fresh blueberries
  • 4 eggs
  • 2 cups of milk
  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • Powdered sugar for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  3. Arrange the cubed bread in a greased 9×13 inch baking dish. Evenly sprinkle the blueberries over the bread.
  4. Pour the egg mixture over the bread and blueberries, pressing down slightly to help the bread absorb the liquid.
  5. Cover the dish and refrigerate for at least 30 minutes, or overnight for best results.
  6. Bake uncovered for 45-50 minutes, or until the top is golden and the casserole is set.
  7. Serve warm, dusted with powdered sugar if desired.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven or microwave.
