A nutritious and quick breakfast featuring scrambled eggs, avocado, fresh spinach, and whole-grain bread.

Ingredients

  • 4 Eggs
  • 1 Avocado
  • 2 slices Whole-grain bread
  • 1 cup Fresh spinach
  • 1/2 cup Cheese (your choice)
  • 1 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs or spices (optional)

Instructions

  1. Heat a skillet over medium heat and add a splash of olive oil.
  2. Crack the eggs into the skillet and season with salt and pepper. Scramble them for about 3-5 minutes until fluffy.
  3. Toast your whole-grain bread to your desired crispness.
  4. Wilt your fresh spinach in a separate pan for just a minute or two.
  5. Assemble your breakfast: Spread creamy avocado on the toast, layer on the scrambled eggs, add wilted spinach, and sprinkle with cheese and any fresh herbs you like.
  6. Serve immediately and enjoy every bite!

Notes

For added flavor, try whisking a bit of cheese into the eggs as they cook. Don’t skip the fresh herbs!
