A quick and delicious meal featuring seasoned chicken and vibrant broccoli served over rice.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup broccoli florets
  • 1 cup cooked rice
  • 1 tablespoon soy sauce (optional)

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and paprika.
  3. Place the chicken in the skillet and cook for about 5-7 minutes on each side, or until it’s thoroughly cooked through.
  4. During the last few minutes of cooking, add the broccoli to the skillet to steam until bright and tender.
  5. To serve, place the chicken over the cooked rice. Drizzle with soy sauce if desired for added flavor.

Notes

Feel free to swap in other vegetables if you have them on hand, such as bell peppers or snap peas, for a different twist.
