A delightful casserole combining fresh spinach, eggs, and cheese, perfect for brunch or light dinner.

  • 6 large eggs
  • 1 cup milk
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the chopped spinach, shredded cheese, diced onion, along with salt and pepper to taste.
  4. Heat the olive oil in a skillet over medium heat. Sauté the onions until they are translucent.
  5. Pour the egg mixture into the skillet, stirring gently for about 2 minutes until everything is well combined.
  6. Transfer the egg mixture to a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes or until the eggs are set and the top is golden brown.
  8. Allow the casserole to cool slightly before serving.

Notes
