A vibrant and creamy pudding made with raspberries and chia seeds, perfect for a healthy breakfast or a light dessert.

Ingredients

  • 1/2 cup fresh or frozen raspberries
  • 3/4 cup almond milk or coconut milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chia seeds

Instructions

  1. Add the raspberries, almond milk, maple syrup, and vanilla extract to a blender.
  2. Blend until smooth for a silky consistency.
  3. Pour the blended mixture into a bowl.
  4. Add the chia seeds and whisk gently until incorporated and no lumps remain.
  5. Cover and place in the fridge to chill for at least 1 hour, preferably overnight.
  6. Serve chilled, topped with granola or fresh fruits.

Notes

For additional flavor, add a tablespoon of nut butter or experiment with different berries. Store leftovers in an airtight container for 3-5 days.
