A comforting one-pot dish featuring tender chicken thighs in a rich, creamy tomato sauce with a delightful blend of sweet and smoky paprika.

  • 1 kg boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon smoked paprika
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (400g) crushed tomatoes
  • 1/2 cup chicken stock
  • 1 tablespoon tomato paste
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 tablespoon plain flour (optional, for thickening)
  • 1 cup roasted cherry tomatoes
  • 1/4 cup crispy fried shallots
  • Fresh parsley, chopped

Instructions

  1. Warm the olive oil in a skillet over medium heat. Add the finely sliced onions and sauté until soft and translucent (5-7 minutes).
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the sweet Hungarian paprika and smoked paprika, cooking for 30 seconds to release their flavors.
  4. Incorporate the sliced bell peppers, crushed tomatoes, tomato paste, chicken stock, salt, and black pepper.
  5. Pour the mixture into the slow cooker. Add the chicken thighs, ensuring they are well-coated in the sauce.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  7. In a small bowl, whisk together the sour cream and heavy cream. Temper with some hot sauce from the slow cooker before adding it back to avoid curdling.
  8. Mix until the sauce is creamy. If preferred thicker, add a flour slurry and stir.
  9. Fold in the roasted cherry tomatoes and continue to cook on low for an additional 10 minutes.
  10. Serve over egg noodles or creamy mashed potatoes, garnished with fresh parsley and crispy shallots.

Notes

For a vegetarian version, swap chicken thighs with firm tofu. Customize the dish by using turkey thighs or adding different bell peppers for variety.
