Recreate the magic of Ruth’s Chris Steak House with this creamy and savory stuffed chicken, perfect for date nights or cozy weeknight dinners.

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, blend together the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, Italian seasoning, salt, and pepper until smooth.
  3. Carefully cut a pocket into each chicken breast, making room for the cheesy filling.
  4. Stuff each chicken breast generously with the spinach and cheese mixture.
  5. Heat a drizzle of olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken into a baking dish and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Allow the chicken to rest for a few minutes before slicing and serving. Enjoy!

Notes

Consider drizzling a basil or pesto sauce on top for an elegant touch. Leftovers can be stored in an airtight container for up to 3 days.
