A comforting and versatile sausage and egg casserole that’s perfect for brunch or a hearty weeknight meal.

  • 1 pound sausage
  • 6 eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 cup bread cubes (optional)
  • 1 cup mixed vegetables (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the sausage over medium heat until fully cooked, breaking it apart into smaller pieces.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined and fluffy.
  4. Grease a baking dish, then layer the cooked sausage at the bottom. If using, add the bread cubes and mixed vegetables next.
  5. Pour the egg mixture evenly over the layered ingredients, and finish by sprinkling with cheese.
  6. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is melted and bubbly.
  7. Let it cool for a few moments before serving.

Notes

For added flavor, sauté onions or bell peppers with the sausage. Let the casserole set for a few minutes before cutting for better shape.
