Delicious and hearty Sausage Breakfast Muffins, perfect for busy mornings or leisurely brunches, filled with savory sausage and gooey cheese.

  • 1 pound breakfast sausage
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain any excess fat.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, combine the milk and eggs, whisking until well-blended.
  5. Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  6. Carefully fold in the cooked sausage and shredded cheese into the batter.
  7. Pour the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool for a few minutes before removing them from the tin to serve.
