A delightful and hearty dish perfect for family brunches or quick weeknight dinners, combining savory sausage, eggs, and vibrant veggies.

  • 1 lb sausage
  • 4 large eggs
  • 2 cups diced potatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a couple of tablespoons of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes. Sauté them for about 10-15 minutes until they’re golden brown and tender, stirring occasionally.
  3. Push the potatoes to the edges of the skillet, creating space in the center. Add the sausage and cook until browned, breaking it up as it cooks.
  4. Toss in the chopped onions and bell pepper, sautéing until they soften, about 3-4 minutes.
  5. Make a little well in the skillet and crack the eggs directly into it. Let them cook until the whites are set, roughly 3-4 minutes.
  6. Season your dish with salt and pepper to taste.
  7. Serve warm and customize with your favorite toppings, like cheese, avocado, or hot sauce.

Notes

To enhance crispiness, soak potatoes in cold water for 20 minutes before cooking. Substitute with turkey or chicken sausage for a leaner option.
