A delightful and hearty Sausage Hash Brown Breakfast Casserole that combines savory sausage, creamy eggs, and crispy hash browns.

Ingredients

  • 1 lb sausage
  • 1 package (30 oz) frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 12 large eggs
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the sausage in a skillet over medium heat until it’s browned and crumbly, draining excess fat.
  3. Combine the cooked sausage, frozen hash browns, shredded cheddar cheese, chopped onion, chopped bell pepper, eggs, milk, salt, and pepper in a large mixing bowl. Mix until well combined.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  6. Let it cool for a few minutes before slicing and serving.

Notes

For a healthier version, consider using turkey sausage or replacing half of the hash browns with fresh diced potatoes.
