A hearty and flavorful chicken curry from South Asia, featuring a rich, aromatic sauce that clings to tender chicken thighs.

  • 4 pieces Chicken Thighs
  • 4 cloves Garlic
  • 1 piece Green Chili
  • 2 tbsp Fresh Ginger
  • 2 pieces Onions
  • 1 tsp Turmeric Powder
  • 2 tsp Chili Powder
  • 2 tsp Ground Cumin
  • 2 tsp Ground Coriander
  • 1 tsp Garam Masala
  • 5 pieces Tomatoes
  • 1/2 tsp Lemon Juice
  • 1 tbsp Fresh Coriander
  • 3 tbsp Vegetable Oil
  • Salt
  • 100 ml Water

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the diced onions and sauté until they are golden brown.
  3. Stir in the chopped garlic and ginger, cooking for another minute until fragrant.
  4. Add the green chili, turmeric powder, chili powder, ground cumin, and ground coriander. Mix this well to form a spice paste.
  5. Incorporate the chopped tomatoes into the mixture, cooking until they soften and meld into the sauce.
  6. Add the chicken thighs, coating them well with the sauce.
  7. Stir in the water, cover, and let it simmer on low heat for about 30 minutes, or until the chicken is fully cooked.
  8. Once cooked, add lemon juice and garam masala, stirring to combine. Adjust seasoning with salt to taste.
  9. Garnish with fresh coriander before serving.

Notes

For extra depth, allow onions to caramelize more. Feel free to add vegetables like bell peppers or adjust spices to taste.
