A delightful dish with seasoned ground beef, crispy roasted potatoes, and tender steamed broccoli, perfect for busy weeknight meals.

  • 200g lean ground beef
  • 2 medium potatoes, diced skin on
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt & black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the diced potatoes with olive oil, oregano, thyme, garlic powder, salt, and black pepper until well coated.
  3. Spread the seasoned potatoes on a baking sheet in a single layer and roast for 25-30 minutes, until golden and crispy.
  4. While the potatoes roast, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks. Season with salt and pepper. Cook until no longer pink, letting it get slightly crispy on the edges.
  5. In a separate pot, bring water to a boil for steaming the broccoli florets. Steam them for 2-3 minutes until they are bright green and just tender.
  6. Once everything is cooked, plate the ground beef, crispy roasted potatoes, and vibrant steamed broccoli, sprinkling with a final pinch of salt and pepper if desired.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat in a microwave or oven to restore crispiness.
