These protein-rich egg bites are fast to assemble and bake, making them an ideal grab-and-go breakfast option.

Ingredients

  • 6 large eggs
  • 0.5 cup milk (whole or 2%)
  • 0.5 cup cooked breakfast sausage (crumbled)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup green onions (chopped)
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Brown the sausage in a skillet over medium heat until cooked through, then cool slightly.
  3. In a large bowl, whisk the eggs, milk, salt, and pepper until smooth and slightly frothy.
  4. Fold in the cooled sausage, cheddar, and green onions until mixed.
  5. Divide the mixture among the muffin cups, filling each about 3/4 full.
  6. Bake for 20–22 minutes until set and lightly golden.
  7. Let cool for a few minutes before removing from the tin and serving warm.

Notes

For dairy-free options, use unsweetened oat milk and omit cheese. You can also substitute sausage with cooked mushrooms or plant-based options.
