A comforting and flavorful crockpot chicken dish that requires minimal effort, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat dry the chicken breasts; season them with salt, black pepper, and smoked paprika.
  2. In a skillet, heat olive oil over medium-high heat. Sear each chicken breast for about 3 minutes on each side until golden brown.
  3. In your crockpot, place the sliced onions and minced garlic as the first layer.
  4. Gently position the seared chicken on top of the onions and garlic.
  5. In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and dried thyme. Pour this sauce over the chicken.
  6. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  7. Remove the chicken. Create a cornstarch slurry by mixing cornstarch with water, then stir this into the remaining liquid in the crockpot. Cook on high for an additional 10-15 minutes to thicken.
  8. Plate the chicken, generously spoon the thickened sauce over it, and finish with a sprinkle of fresh parsley.

Notes

For added flavor, consider a splash of rice vinegar or lime juice in the sauce. Leftovers can last up to 3 days in the fridge or can be frozen for up to 3 months.
