A delightful Mediterranean breakfast featuring poached eggs in a spiced tomato sauce served over toasted bread.

Ingredients

  • 2 large eggs
  • 1/2 cup canned diced tomatoes
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 bell pepper, diced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 slices of bread
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Heat some oil in a skillet over medium heat.
  2. Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.
  3. Stir in the minced garlic, paprika, and cumin, cooking for another minute until fragrant.
  4. Pour in the canned diced tomatoes and allow the mixture to simmer for 5-7 minutes.
  5. Create two small wells in the mixture and crack an egg into each. Cover the skillet and cook until the eggs reach your desired doneness.
  6. Toast your bread slices until they are golden brown.
  7. Serve the shakshouka mixture over the toast and garnish with freshly chopped herbs.

Notes

For a spicier dish, add a pinch of red pepper flakes. Use stale bread for a nice crispy texture once toasted.
