Delightful dish with poached eggs in a spicy tomato sauce paired with crisp avocado toast, perfect for brunch or dinner.

Ingredients

  • 2 cups chopped tomatoes
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 slices of bread
  • 1 avocado, smashed
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a cast-iron skillet. Sauté diced onions and bell peppers until softened.
  2. Stir in chopped tomatoes and spices; let simmer to deepen flavors.
  3. Crack eggs into the sauce; cover and cook until eggs reach desired doneness.
