A hearty and customizable sheet pan breakfast featuring eggs, vegetables, breakfast meats, and cheese, all baked together for a hassle-free morning meal.

Ingredients

  • 8 Eggs
  • 1 Bell pepper, chopped
  • 1 Onion, chopped
  • 1 cup Spinach
  • 1 cup Cheddar cheese, shredded
  • 1 cup Feta cheese, crumbled
  • 1 cup Cooked breakfast meats (bacon, sausage, ham)
  • 2 cups Diced or shredded potatoes
  • 1 tsp Salt
  • 1 tsp Pepper
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a sheet pan or line it with parchment paper.
  3. Spread the diced potatoes evenly across the pan. Season them with salt and pepper.
  4. Bake the potatoes for about 15 minutes, or until they’re tender.
  5. Chop your bell peppers, onions, and breakfast meats while the potatoes are baking.
  6. Layer the chopped vegetables and meats on top of the potatoes after 15 minutes.
  7. Crack the eggs directly onto the mixture or whisk them and pour over everything.
  8. Sprinkle the cheddar and feta cheese on top.
  9. Return the sheet pan to the oven and bake for another 10-15 minutes, until the eggs are set.
  10. Serve hot and enjoy!

Notes

For added flavor, pre-cook breakfast meats and use fresh herbs for garnish.
