A vibrant and flavorful sheet pan dinner featuring chicken and bell peppers, perfect for busy weeknights.

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: avocado, salsa, cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Stir until well-coated.
  3. Spread the mixture evenly on a sheet pan in a single layer.
  4. Bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked and vegetables are tender.
  5. Remove from the oven, serve in warm tortillas, and add your favorite toppings.

Notes
