Simple Breakfast Quesadillas

Cheesy and warm breakfast quesadillas filled with creamy scrambled eggs and melted cheddar, perfect for any morning.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Whisk together the eggs and milk, seasoning with salt and pepper to your liking.
  2. Heat a non-stick skillet over medium heat and melt the butter completely in it.
  3. Pour the egg mixture into the skillet, scrambling until fully cooked. Remove from heat and set aside.
  4. If needed, wipe the skillet clean and place one tortilla back into the skillet over medium-low heat.
  5. Sprinkle half of the shredded cheese evenly over the tortilla.
  6. Layer the scrambled eggs on top of the cheese, followed by the remaining cheese.
  7. Carefully place the second tortilla on top and cook for 2 to 3 minutes or until the bottom is golden brown.
  8. Flip the quesadilla gently and cook for another 2 to 3 minutes until the second side is golden and the cheese is deliciously melted.
  9. Remove from heat, slice into wedges, and serve immediately.

Notes

For a spicier twist, substitute cheddar with pepper jack cheese, or add spinach for nutrition.
