Quick and delicious breakfast quesadillas filled with fluffy scrambled eggs and gooey cheese, perfect for busy mornings.

Ingredients

  • 2 large flour tortillas
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
  2. Heat a non-stick skillet over medium heat and add the butter until melted.
  3. Pour the egg mixture into the skillet. Scramble the eggs until cooked through, then remove from heat and set aside.
  4. If necessary, wipe the skillet clean. Place one tortilla in the skillet on medium-low heat.
  5. Sprinkle half of the cheese over the tortilla, then top with the scrambled eggs. Add the remaining cheese on top.
  6. Place the second tortilla over the filling.
  7. Cook for 2 to 3 minutes until the bottom is golden brown. Carefully flip the quesadilla.
  8. Cook for another 2 to 3 minutes until the other side is golden and the cheese is melted.
  9. Remove from heat, slice into wedges, and serve immediately.

Notes

For a dairy-free option, swap cheddar for a dairy-free cheese alternative. Whole wheat tortillas can also be used for added health benefits.
