Deliciously chewy bagels made with sourdough discard that are packed with protein, perfect for breakfast or snacks.

  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1/4 cup protein powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup warm water
  • 1 tablespoon honey or maple syrup
  • Sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sourdough discard, all-purpose flour, protein powder, salt, and baking powder.
  3. Pour in the warm water and add the honey (or maple syrup). Stir until you have a cohesive dough.
  4. Transfer the dough to a floured surface. Knead for about 5 minutes until it’s smooth.
  5. Divide the dough into equal portions and shape each piece into a bagel, creating a hole in the center.
  6. Place the bagels on the prepared baking sheet. If desired, sprinkle sesame seeds or your favorite seasoning on top.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  8. Allow them to cool slightly before serving. Enjoy your protein-packed bagels for breakfast or in a sandwich!

Notes

Make sure your sourdough discard is at room temperature for easier mixing. Use a little extra flour if the dough feels too sticky during kneading.
