Fluffy and nutritious baked protein pancake bowls, perfect for breakfast or post-workout treats.

Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 tsp baking powder
  • 1/2 cup milk or non-dairy milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, protein powder, and baking powder. Mix until well combined.
  3. In another bowl, whisk together the milk, egg, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients, stirring gently until well combined.
  5. Gently fold in the Greek yogurt for that wonderful creaminess.
  6. Transfer the mixture to a greased baking dish or individual ramekins, ensuring even distribution.
  7. Bake for about 15-20 minutes, or until the tops turn golden and a toothpick inserted comes out clean.
