  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Begin by searing the chicken in a hot skillet until golden brown to enhance the stew’s flavor.
  2. Transfer the seared chicken to the slow cooker and add the diced vegetables, cubed potatoes, minced garlic, and bay leaves.
  3. Sprinkle the mixture with thyme, salt, and pepper, and stir gently to combine.
  4. Pour the chicken broth over the ingredients. If using flour, whisk it with a bit of broth before adding, or sprinkle it directly into the pot and stir well.
  5. Cover the slow cooker and set it to cook on low for 6–8 hours or on high for 3–4 hours until all ingredients are tender and flavorful.
  6. After cooking, remove the bay leaves, taste the stew, and adjust seasoning as necessary. Serve warm, garnished with fresh parsley.

Notes

Pair with crusty bread or serve over rice or noodles. For a thicker stew, mash some of the potatoes or add flour before cooking.
