A comforting slow cooker meal featuring tender chicken and fluffy rice with bright lemon and fresh herbs, perfect for busy weeknights.

Ingredients

  • 4 chicken thighs or breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup peas (optional)

Instructions

  1. Place the chicken in the slow cooker.
  2. Add the rice, chicken broth, lemon juice and zest, garlic, onion, thyme, rosemary, salt, and pepper to the cooker.
  3. Stir gently to combine all ingredients.
  4. Drizzle the olive oil over the top to enhance the flavor.
  5. Cover and cook on low for 240-360 minutes, or until the chicken is thoroughly cooked and the rice is tender.
  6. If using peas, toss them in during the last 30 minutes of cooking for a pop of color and nutrition.
  7. Once done, fluff the rice with a fork and serve warm.

Notes

For best results, brown the chicken in a skillet before slow cooking. Feel free to substitute herbs or grains to suit your taste.
